Scones

Preheat oven to 425. In a bowl mix 2 cups of biscuit mix, 1/4 cup yogurt or sour cream, 1/4 cup shortening or butter, 3/4 cup dried fruit, 1/2 cup brown sugar or sugar. Mix all together using your hands and make into 1 inch thick and 3 inch wide patties. Bake on cookie sheet for 12 to 15 mins, until golden brown. makes 6 to 8 scones.

Souffle

Preheat oven to 375. Using a muffin tray either line with cupcake liners or grease with shortening. In a bowl mix together 2 cups biscuit mix and 1 1/2 cups milk (mix will be similar to a paste), in a separate bowl whisk 4 eggs, salt & pepper to taste, 2 tbsp. of milk. After yolk is broken down mix 1 1/2 cups of desired toppings to egg mixture (ex. ham and cheese or sundried tomatoes and cheese). Transfer 1 1/2 tbsp. of biscuit mix to cupcake pan, then top it with 1 tbsp. of egg mixture and then top with 1 tbsp. of biscuit mix. This recipe will make 12 soufflé. Bake for 20 mins. Let cool for 5 mins.

Honey Mustard

Mix together 2 tbsp. of honey and 1 tbsp. of mustard. This goes great on sandwiches!

Chicken Salad

1 1/2 cup cooked or can drained chicken, salt and pepper to taste, 1/8 tsp. cinnamon and a few dashes of nutmeg, 1/4 cup of mayo, mix all together. Fresh grapes, apples or celery is delicious with this.

Cucumber Sandwich

Using 2 slices of bread spread cream cheese on one side then sprinkle with garlic seasoning. Top with cucumbers then top with bread, remove the crust. You can add cucumbers to the top of the bread for an added touch.

Tuna Salad

In a bowl mix 2 cans drained tuna, salt and pepper to taste, 1/2 tbsp of homemade honey mustard, 4 tbsp of mayo. Refrigerate and enjoy with crackers, celery or as a sandwich.

Strawberry Syrup

Using a blender, mix 8 medium sized strawberries and 1/2 cup sugar. Mix this with tea or lemonade for some added flavor. Just follow the recipe of your tea or lemonade and add your homemade strawberry syrup. Makes a 1/2 gallon.

Balsamic Dressing

Equals parts balsamic vinegar and oil, and a few drops of water. Season to taste with salt, pepper, red pepper, garlic minced or powered, and onion powder. If waiting to tame the vinegar taste, you can add a bit of sugar. Mix all together and refrigerate.
